At a local coffee house I delighted in the site of some cute "nest cookies." These were made with a no-bake cookie recipe that I have made many times. All they did was add three Easter peanut M&Ms in the center to make them look like a bird's nest. I resisted and did not sample any but I did decide I would replicate these for my grandchildren.
Bird Nest Cookies
Makes 2 dozen
2 cups sugar
1/2 cup milk
1 stick margarine
3 cups quick oats
4 tablespoon cocoa
1/2 cup smooth peanut butter
1 teaspoon vanilla
1 bag of mini Whopper Robin Eggs
Heat sugar, milk and margarine in a medium saucepan. Heat to boiling. Boil 2 minutes
Add quick oats to a medium bowl.
Add cocoa.
Add peanut butter.
Add boiling mixture to oats, cocoa and peanut butter. Add vanilla.
Stir well.
Drop 1 tablespoons cookie dough onto waxed paper. Press three Whopper mini Robin Eggs in the center to form a bird's nest shape.
