Potato Salad
2 pounds of potatoes
1/2 cup finely chopped onion
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup Italian salad dressing
1 cup Miracle Whip salad dressing
1/2 cup chopped celery
3 hard-cooked eggs, chopped fine
1 cup sweet (or bread and butter) pickles
Wash potatoes. Heat 1 inch salted water to boiling. Add unpared potatoes. Cover tightly; heat to boiling and cook 30-35 minutes or until tender. |
Drain; cool and peel. |
While potatoes are cooling, boil 3 eggs until hard-cooked. Cool and peel shell. Chop fine. |
When potatoes are cool...cut into cubes. |
Add salt. |
Add pepper. |
Chop onion fine. |
Italian salad dressing of choice. |
Mix cubed potatoes, salt, pepper and Italian salad dressing. Cover; refrigerate for at least 2 hours. |
Just before serving; add Miracle Whip salad dressing, celery, eggs and cut up pickles. Add more salt and pepper to taste. Toss all until potatoes are well coated. |
