Red velvet cupcakes are so impressive, especially when they are topped with swirls of cream cheese frosting. I prefer to not cover the entire top of the cupcake so the red color shows against the white frosting. Did you know that red velvet cake is really a devil's food cake that has red food coloring added to it? Always use a recipe for red velvet cake that contains buttermilk. Buttermilk ensures that the cupcake stays moist.
Recently, a friend asked me to make two different varieties of cupcakes for an appreciation brunch she was having to honor volunteers for a special school project. Her theme included something about candy so she asked me to incorporate candy into the cupcake making. I topped these red velvet cupcakes with three Sno-Cap candy pieces in the center.
