Easter Cookies

At a local coffee house I delighted in the site of some cute "nest cookies."  These were made with a no-bake cookie recipe that I have made many times.  All they did was add three Easter peanut M&Ms in the center to make them look like a bird's nest.  I resisted and did not sample any but I did decide I would replicate these for my grandchildren.  




Bird Nest Cookies
Makes 2 dozen
2 cups sugar
1/2 cup milk
1 stick margarine
3 cups quick oats
4 tablespoon cocoa
1/2 cup smooth peanut butter
1 teaspoon vanilla
1 bag of mini Whopper Robin Eggs

Vegetable Pizza

A sweet lady from our church shared this recipe with me back in 1995 (she had dated her recipe card 9/95).  I have prepared this appetizer several times over the years, but had not recently.  When looking through one of my recipe files for an appetizer to make for a catering event...this one caught my attention.  It's easy and delicious!  What follows are pictures and directions for making Vegetable Pizza.  Feel free to change the vegetables.  I have used green and red peppers in the past, as well as cauliflower and carrots.  The possibilities are numerous.

Just Plain Fun

Why is everyone so crazy for cupcakes?  It's simple---cupcakes are fun!  Do you need an occasion to make cupcakes?  Not me!  This particular time, though, I made cupcakes for a trivia night our school held to raise funds for Relay for Life.  I'm always in search of new and innovative cupcake designs.  These Margarita Cupcakes found me one day when I was looking through a cupcake cookbook in our school library.  Just so my readers will know....I substituted the lime juice for the tequila.  I was being a good school librarian. 


Margarita Cupcakes
Makes 22 cupcakes
1 package (about 18 ounces) white cake mix
3/4 cup plus 2 tablespoons margarita mix, divided
2 eggs
1/3 cup vegetable oil
1/4 cup water
1 tablespoon grated lime peel (about 3 limes), divided
Juice of 1 lime
2 tablespoons tequila or lime juice
3 cups powdered sugar
1 tablespoon sparkling or granulated sugar
1 tablespoon salt (optional)
Green and yellow food coloring
Lime peel strips (optional)

Foil Pouch Supper


Recently my husband and I were at Silver Dollar City in Branson.  I always visit the Main Street Shops where I can find something in the food category.  This time it was a new cookbook... 101 Things to Do With Rotisserie Chicken by Madge Baird.  I read through the recipes on our trip home.  When I came across Foil Pouch Suppers I was intrigued by this unique method of making a quick dinner.  To my surprise, everyone thought they were great and would like for me to make them again soon.  Give them a try and let me know what reactions you receive.
