Chocolate Crackle Cupcakes

Some facts I can disclose about this recipe for Chocolate Crackle Cupcakes...
  • I've had it in my collection for a very long time.  How do I know one might ask?  It's written on a recipe card from the 70s.  
  • The word oleo is used in the ingredients...no disrespect to my grandmothers, but that's a term used way back then.
  • The recipe card it's written on is soiled and torn.
  • I no longer write like the print the recipe is written in.  The handwriting looks more like how I wrote in high school. 
  • The recipe is memorable because I have thought of it many times.
  • This recipe has been lost more than I want to admit. Luckily, I always find it!
  • I have no idea where or from whom I got this recipe. 
  • These cupcakes are super easy to make!

another spelling challenge

Kebab or Kebob?  How do you spell it? Kebab will be my choice.  I'm not sure about you, but I am a big fan of chicken kebabs, especially this time of year when the grill is on fire!  All I use to prepare were beef kebabs, but once I was introduced to chicken kebabs...beef kebabs took a back row seat. Many chicken kebab recipes have been attempted, but not a one of them compares to this one. I really can't take all the credit...this chicken kebab recipe was created as a result of ingredients in several different beef and chicken kebab recipes I've made over the years. Hope you enjoy the taste!

Citrus Chicken Kebabs
INGREDIENTS

  • 4 chicken breasts
  • orange/pineapple juice (see picture below for my preference)
  • 1 cup fresh pineapple juice
  • fresh rosemary leaves
  • 2 red peppers
  • 2 green peppers
  • 1 vidalia onion
  • fresh pineapple chunks
  • 1 fresh lemon
  • sea salt, to taste
  • pepper, freshly ground, to taste
  • garlic pepper, to taste

Red Velvet Cupcakes

Red velvet cupcakes are so impressive, especially when they are topped with swirls of cream cheese frosting.  I prefer to not cover the entire top of the cupcake so the red color shows against the white frosting.  Did you know that red velvet cake is really a devil's food cake that has red food coloring added to it? Always use a recipe for red velvet cake that contains buttermilk.  Buttermilk ensures that the cupcake stays moist.

Recently, a friend asked me to make two different varieties of cupcakes for an appreciation brunch she was having to honor volunteers for a special school project.  Her theme included something about candy so she asked me to incorporate candy into the cupcake making.  I topped these red velvet cupcakes with three Sno-Cap candy pieces in the center.

rainbow rotini chicken salad

I have made this pasta recipe for many years. Unfortunately, I can't recall what restaurant I had the pleasure of having a salad just like this one, but I do remember going home and replicating it as best as I could. That was many years ago and I continue to consider this one of my favorite summer salads...actually - anytime of the year salad. It's a simple pasta salad, one that could easily be changed to one's liking.  Consider adding any combination of the following ingredients: chopped boiled eggs; tomatoes; green, red or yellow peppers; sweet or dill peppers; shredded cheese of choice...the possibilities are endless.  Try this salad soon and post how you made it.
