Happy Fall


Everyone loves pumpkin bread.  I know...that's my opinion!  Do you love pumpkin bread?  I do!  Making pumpkin bread is one of those Fall traditions. Something about a warm loaf of pumpkin bread coming out of the oven, along with the smells it creates, states...Autumn has arrived.  My husband and two children moved to Florida one year after living in the Midwest for nearly 25 years.  What I missed most about the Midwest, besides my family, was the change of seasons - especially FALL.  Well, we are back in the Midwest...and I'm loving the fall months, especially the part that involves baking pumpkin bread.

Pumpkin Bread
(Printable Recipe)
3 1/2 cups sifted flour
2 tsp. soda
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
3 cups sugar
1 cup vegetable oil
4 eggs, well  beaten
2/3 cup water
2 cups pumpkin
3/4 cup chopped walnuts (optional)

Hot Chocolate October Style

This post is for Missy, my niece.  She posted on Facebook tonight that she wanted some hot chocolate.  My post back to her was "Come on over. I make it like your mom. I'll make you some." Making homemade hot chocolate has been a tradition in our family for a very long time.  It might be enjoyed when the family gets together to go sledding in winter months, Christmas morning breakfast or because our own kids and grandchildren say "make us some."  I just happened to make some recently, so here you go Missy!


HOT CHOCOLATE

4 rounded tsp. cocoa powder
1/2 cup sugar
pinch of salt
3/4 cup hot water
3 1/4 cups whole milk
1 tsp. vanilla
marshmallows (optional)

cheesy cottage potatoes

Want something delicious and quick to make?  A nice change from mashed potatoes as your side dish would be these cheesy cottage potatoes.  I have been making these for a very long time.  An indication of that is the recipe card needs replacement.  I wouldn't want a scientist  to put it under the microscope.  What they might find could be frightening. Yuck, enough of that!  The focus is...these Cheesy Cottage Potatoes are wonderful, so looking at the soiled recipe card when preparing them is quickly overlooked. When thinking skinny, I add fat free sour cream, 98% fat free chicken soup, and fat free cheddar cheese.  Just add a little more onion and pepper to accent the taste.

Favorite Friday Food Find

















I won't hide my "kitchen addictions" from you.  My love for Marshalls and TJ Maxx are real.  Do you know why?  They have some wonderful little treasures down the isles of the kitchen section.  I call it kitchen heaven in my head.  For sure, way too many bowls and dishes are shelved in my kitchen, but Marshalls and TJ Maxx continues to find them and mark them at unbelievable prices.

pumpkin...tis the season

Fall is in the air...so is anything pumpkin. I've had the candy corn in the candy jar for awhile, but baking something pumpkin had not happened until just recently.  I thought about baking some "tried and true" pumpkin bread, but decided on these pumpkin cookies.  The recipe was tucked away in my recipe book, not touched for sometime, destined to be found - so here you go.  By the way, they aren't that pretty, but they have been kid tasted and stamped with their approval.  



Pumpkin Cookies
2 cups flour
1 cup pumpkin
1 cup sugar
1 stick oleo (softened)
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla
1 cup chopped dates
1 cup chopped nuts

Mix all of the above and drop by teaspoon size on ungreased cookie sheet.  Bake at 350 degree F. for 12 minutes.  Remove from oven and place on cooling rack.  

ICING
1 cup brown sugar
1 stick oleo
4 tablespoon milk


Mix all, in a small saucepan.  Bring to a boil.  Remove and add one box of powdered sugar and 1 teaspoon vanilla.  Drop one teaspoon on top of each cookie.
