Pumpkin Pie Cake

My husband loves a cake I make for him, oh so often!  It's not this cake...but it does resemble it.  The cake that my husband prefers contains a few different ingredients, such as pineapple and canned cherry pie filling.  My daughter-in-law made this Pumpkin Pie Cake a few years ago and I thought about it recently when thinking about something "pumpkin" to make for Thanksgiving Dinner. I'm not a big pumpkin pie fan, so this is a good substitution.  What I like best...It's easy to make.  
PUMPKIN PIE CAKE
(Printable Recipe)
32oz can of pumpkin 
4 eggs 
1 can milnot 
1 1/2c sugar 
2 tsp cinnamon 
1/2tsp ginger 
1/2tsp pumpkin pie spice
1  box yellow cake mix
1 stick butter, melted
1 1/2 cups pecans, chopped 
Mix first seven ingredients together and mix well.  Pour into a 9x13 cake pan. Sprinkle a box yellow cake mix over the top and then drizzle with melted butter. Layer top with chopped pecans.  Bake at 325 degrees F. for 1 hour or until knife comes out clean.

Chicago Inspired

I love Chicago!  I love everything about it, including the wonderful food!  My sister, her daughters, my daughter and me take a yearly trip to the windy city each summer.  It has become one of of our favorite traditions!  We hop on the Amtrak and arrive ready to find new places to shop and eat.  One of my favorite pizza places is Giordano's and what I like best is their famous stuffed pizza.  One must be patient, as it takes awhile to bake after you order, but it's worth the wait.  I was inspired by Giordano's to find a good recipe for deep dish pizza.  I've tried a few and this is the one I have voted as #1.  It is an adapted recipe from "The Casserole Queens."

Three Ingredient Soup Recipe

Creamy Potato Soup Mix + Broccoli + Velveeta Broccoli Potato Soup

I know what you are thinking.  Can this soup possibly be that special?  Well let me tell you...This soup tastes deli-sh!  My friend, Marla, gets credit for this easy soup.  What I especially like about this recipe is that the Bear Creek Soup mix has bits of hash brown potatoes in the creamy base which makes the texture interesting, along with the bite-sized broccoli pieces.  Keep these three ingredients stocked in your kitchen and soup will always be close at hand at the end of a busy day when you go home and say you can't possibly cook dinner.  You can with this recipe, because little time and effort is needed. Just don't tell your family and friends that the soup they are bragging on has only three ingredients. Pretend you slaved over a hot stove all evening to prepare them a meal.  Just kidding!    
 Mix soup mix according 
to directions.

pizza in a soup bowl


I remember when I had this soup for the first time...it was at a school carry-in. and I remember requesting the recipe from Ann Hall.  You've heard her name before mentioned in a previous post.  She has shared some amazing recipes in the past.  The first recipe that comes to mind when I think of Ann is her absolutely, wonderful Mounds Chocolate Cake!  I must get that recipe from her, as Ann no longer works at our school.  I know where to find her, though, when I need a good recipe.  This soup is what I call "pizza in a bowl."  You start with mushrooms and onions and end with chopped pepperoni.  Another key ingredient that tops a good pizza is Italian sausage and you'll find it in this soup recipe too!  My son and his wife recently made this soup for a United Way fundraiser (contest).  While this soup didn't win, it has won in the hearts of everyone who has eaten it in our family.  My grandson is actually sitting beside me as I write this post and he said..."I love this soup!"  What more can I say?


The recipe calls for fresh.
Sometimes I do fresh, but 
I prefer canned mushrooms.

green soup at its best

Its rainy and cold where we live at the present.  One might say..."It's soup weather!"  At My Kitchen Addictions...I declare this soup week, so check back for more soup recipes this week.  I had heard about split pea soup before, but honestly over the years...I had never made it until now.  On a road trip to the Iowa State Fair recently, my husband, sister and her husband came across this quaint, little Amish store and I'm so glad we did.  I bought a couple of bags of dry, split peas.  My sister, Debbie, told me she had an awesome recipe for split pea soup, so there you go!!  I was on a mission to make it myself.  My brother-in-law says that he loves this soup.  Well guess what?  My husband says he loves it as well.

Chocolate Filled Cupcakes

My yearly Halloween tradition is to make cupcakes for the few Trick or Treaters we have.  Living in the country has many perks, but one we don't have is a lot of Trick or Treater traffic.  So the family members and close friends that come to our home are treated to homemade cupcakes. This year...I chose these Chocolate Filled Cupcakes I make at different times throughout the year.  My sister gave me this recipe eons ago!  I'm so glad she did!
