sliders revisited

My husband does have a creative style and he often proves this in the kitchen. He normally does not have a choice on what is showing on our television on Saturdays. My choice for viewing on Saturdays when I'm puttering about the house doing my usual weekend chores is the Food Network. Pat and Gina on Down Home With the Neelys were making turkey sliders last Saturday. My husband decided to take the Neely's version and make it his own. He often does this. Here are the results.

don't change a thing

I experiment and try new things. Changing an ingredient and/or adding something new to a recipe is something I do often....but sometimes I don't change a thing. The way I make my lasagna is one such recipe.  I have made this lasagna for my family for a very long time.  When I asked my husband recently what he wanted for the main course at his birthday celebration with his family...he said "your lasagna."  That is the best compliment I could get and it also confirms that I don't need to change a thing when I make "my lasagna."

Baked...Not Fried

Sweet Potatoes are in!  My husband and I go to a local restaurant where baked sweet potatoes with butter and brown sugar rein supreme!  On the healthier side though...we like these Baked Sweet Potato Fries just as much.  I have tried to make sweet potato fries using many different recipes until I finally created my own.  You really have to watch these closely in the oven as they tend to burn on the edges.  Serve these Baked Sweet Potato Fries with ketchup, honey mustard, ranch dressing or barbeque sauce.  My husband and I have tried all of those and can't make up our minds which we like best.  You decide!

where women cook

Today I'm away from my kitchen, cookbooks and recipe box.  This doesn't stop me from having "my kitchen addictions" forefront on my mind!  I love to shop, but more than that I like to go to bookstores to browse the cookbook section.  Today I ventured to Books a Million where I found numerous food magazines and cookbooks to review.  With a Republic of Tea Blackberry Sage hot tea in hand and a comfy chair in sight, I settled down to a long morning of reading what I love!  I have a great find to share.  Have you discovered the new magazine Where Women Cook?  Oh my, it's a jewel! Check the following link out to find out more.  I couldn't tear myself away from the articles, pictures and recipes within this charming and alluring magazine. Notice who is on the cover...the very person who inspired me to begin my blog.... The Pioneer Women (Ree Drummond).

chicken marsala

Eating healthier is definitely on my mind as of late.  I recently dusted off my notebook that I keep my Weight Watchers recipes.  I have many favorites from that collection and many I have saved to prepare later.  Well, I made this Chicken Marsala later and it will be moved to the front as a favorite.  It's not only easy but very tasty!  I have a confession...I have never purchased Marsala wine before so I headed to the wine section at the store and looked up and down the many bottles of wines; not once, but twice and could not find it.  I had to call my sister, as I recalled her making a dish in the past in which she used Marsala.  I was a little embarrassed to learn that this is a cooking wine and is located in the same location where one finds red and white wine vinegar.  Marsala looks like wine, tastes like wine and smells like wine, but it's not shelved with the wines I drink in a pretty wine glass.  For those Weight Watchers out there...POINTS value per serving: 4

orange salad

Orange sherbet, mandarin oranges and crushed pineapple all together in one salad equals pretty tasty!  Like so many of my friends, Bonnie is an excellent cook!  Recently, Bonnie brought this delicious orange salad to a gathering my friend Marla had.  We had so much fun enjoying what we all brought as well as the wonderful conversations we enjoyed.  This salad is not only pretty but refreshing as well.  It first reminded me of a jello salad my mom use to make that had some of the same ingredients plus cottage cheese. You'll love the simplicity of this recipe!

emotional baking makes me happy

Recently our book club chose The Happy Baker as our selection to read.  We all decided to read the book and then prepare a favorite recipe from the book to share at our next meeting. This cookbook memoir is a collection of recipes that Erin Bolger matched with her personal dating memories.  When reading about her life experiences one will laugh, cry and get hungry.
Triple Decker Carrot Cake
2 cups all-purpose flour
2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon
2 cups sugar
1-1/2 cups vegetable oil
